David Cowen applied at the Brewster Sessions 3rd September 1898 to open at
5:00am instead of 6:00am for the sale of coffee, tea and cocoa. He stated that he averaged
30 customers each morning, who consumed 5 gallons of coffee, 1 gallon of tea and 1 gallon
of cocoa. The profit on a gallon of coffee was 10d and more profit was made in the morning
than during the rest of the day selling beer and spirits.
The Bench refused the application since it would set a precedent.
(Total of 7 gallons of beverages = 56 pints = 1.87 pints per customer !)
